As you may know by now, I’m a HUGE fan of grilled cheese sandwiches. And panini’s. Honestly they’re one and the same to me. Anyway, nothing makes me happier than eating a melty, cheesy sandwich filled with yummy extras. This time, I went for pulled pork grilled cheese. I was craving a pulled pork grilled cheese, but I had no intention of making the pork myself.
There’s great little spot within walking distance that makes smoked goodies and southern sides. I picked up some pulled pork, pulled chicken (for my son), sweet potatoes, mac and cheese, and onion rings, cause why not? There were four different sauces to choose from, so I grabbed Carolina, and Memphis, and headed to the house. The only cheese I had left in the house was a bit of muenster, and white cheddar. Not a problem. It was enough for three grilled cheese sandwiches.
I added the meat to a pan, tossed in the bbq sauce to coat, and made sure the meat was heated through. Then I grabbed my grill pan, slathered a little mayo (no butter please) on the outside of the whole wheat sourdough, and layered it with cheese, meat, then more cheese. I left the top slice of bread off, and covered the sandwiches open faced with a lid to cook the sandwiches slow and low. This is my preferred method, because I want to make sure that everything is warm, and the cheese is perfectly melted. When I can see the top layer of cheese soften, I top them with the other slice of bread and flip, giving them a little press, then wait for it to turn golden brown.
This pulled pork grilled cheese, like my other grilled cheese sandwiches didn’t disappoint.

Yes, please! Pulled pork is one of my favorite foods in the world! I’ve never had it on a grilled cheese but it sounds wonderful!
