When I was a stay at home mom, Miles would wake up to a homemade breakfast all most every morning. The only exception was when he wanted cereal. Now that I’m a single mom working full time, it’s toast every day. Sometimes I’ll batch cook waffles or scones, but it’s usually just the toast. Today I woke up with a little extra time and made him a sausage egg and cheese sandwich for breakfast. I had made English muffins the other day, and still had a few left over.

I can’t remember the last time I saw I teenager this happy so early in the morning. He gobbled it up, and asked for another one. I totally forgot about the teenage appetite. I didn’t have time to make another one, so he had a plain English muffin instead.

The sausage McMuffin (no judging) was his favorite as a child. I would make a homemade version with store bought English muffins, regular sausage patties, and American cheese. This one was a little fancier. The English muffins were homemade. I used savory sage sausage and formed the patties by hand. I topped the sausage with Gouda cheese, and then folded scrambled egg with parsley, adding a little kimchi on top. Since he’s not a huge fan of kimchi, I just added a little. I don’t eat eggs, but I was curious to know if it would be any good. The kimchi wasn’t bad. I could take it or leave it. Though I can say I wish I made one for myself. At least now I know what I’m having for dinner!

  4. One of the benefits from being a native “Jersey Girl”, is having grown up with the “Taylor Ham, Egg, and Cheese, on a Hard Roll (or bagel).
    This breakfast sandwich is also known as “Jersey on a Roll,” and one of the things I miss, since moving out of the state. Since Taylor Ham is hard to come by in California, I substitute sausage or bacon, but it’s not quite the same, especially since hard rolls and decent bagels are definitely east coast specialties too!

  5. OH MY GOSH. wanna come over to my house and cook?! last month was the first time i had kim chee and cheese together — its life changing. i never thought to put it all in a sandwich… for breakfast!! YUM! I’m going to make this this weekend

    Oh boy does this look good!! I would probably use chicken sausage because I don’t eat beef or pork but I definitely want to make this for my fiancé. Thanks for sharing!
