Bacon and Cheese Stuffed Biscuits

I’m going to file this bacon and cheese stuffed biscuit recipe under quick and easy.  I hit the ground running this weekend, starting laundry before I even made breakfast. I had to run to the market for detergent mid load and tried to think of what I could make quickly for breakfast.  I grabbed a can of biscuit dough and thought of what to do with it on the short drive home.  Miles loves breakfast sandwiches so I thought I would make him one using the waffle maker.  The novelty of making any and everything in a waffle maker hasn’t worn off yet!

I quickly made a few pieces of bacon and was going to scramble a few eggs until I saw that we didn’t have any (oh well!), so I stuffed the biscuits and tossed them into the waffle maker.  I love this little hand held treat.  I can’t think of anything better than melty cheese and bacon.  I even dipped a few bites in syrup.  This is one of those “you can put anything in it” recipes and it will taste great.  Next time, when I have eggs on hand, I will add a little scramble to them, or maybe sausage, or I’ll make a dinner version with hamburger and cheese, or a lunch version with turkey and cheese, or a taco version or one stuffed with chocolate!

 

Bacon and Cheese Stuffed Biscuit

  • 1 can of biscuit dough
  • 8 slices of bacon (, cooked crisp)
  • 1-8 oz bag of finely shredded sharp cheddar cheese
  1. Flatten each biscuit into a 3-inch round. Sprinkle 1 tablespoon of cheese on four of the biscuit rounds leaving a ½ inch border. Top with two slices of bacon broken into small pieces. Sprinkle 1 tablespoon of cheese on top of the bacon. Take a round of biscuit dough and lay on top pressing the edges together. Repeat with remaining dough. Cook in a waffle iron until golden brown. Remove from waffle iron and repeat with remaining biscuits.
