Omg, I can’t believe I’ve been home sick for a week! And so close to the holiday! I’m really bummed because, in addition to not being able to post last week, I was unable to try version four of an apple butter pie recipe that I was really looking forward to posting for Thanksgiving and debuting for my family. Instead, I’m going do a little throw back and re-share my butternut squash pie recipe.
I was looking for an alternative to pumpkin and had no idea that squash was the runner-up. While doing a little digging on squash, I found out that some canned pumpkin is actually a blend of pumpkin and squash. Who knew! I can also tell you that I love this recipe. I love the hint of ginger in the front with a finish of nutmeg. I was never a huge fan of pumpkin pie, but I can say that it’s become one of my favorite fall comfort pies.
