I’m finally at the bottom of the bag of m&m’s. This last recipe featuring m&m’s was the result of a combination of using the rest of the candy and cleaning out my cupboard.
I knew I wanted to make brownies with m&m’s, but I didn’t know that I had a box of brownie mix in my cupboard. Miles was not pleased. He thinks I should always make things from scratch. I actually keep a box around in case I want to test out a brownie recipe quickly, usually involving adding other ingredients like candy, or caramel, or pretzels etc.
This time it was m&m’s and peanut butter chips (something else I found hiding in the cupboard). I would love to say that the extra ingredient added to the brownie mix was from pure inspiration and creativity, but honestly, I ran out of vegetable oil, so I used extra virgin olive oil instead.
I absolutely loved it! It gave the brownies a nice earthy flavor and toned down the sweetness of the box mix. I loved the double chocolate from the m&m’s and peanut butter chips too. I’m going to try olive oil in my homemade brownie recipe, but I think I will try it with plain olive oil and not extra virgin, which is all I had on hand. I love discovering new recipes by accident!
Olive Oil Brownies w/M&Ms and Peanut Butter Chips
- your favorite brownie box mix
- olive oil
- ¾ cup m&m’s
- ¾ cup peanut butter chips
make the brownies
- Prepare the brownie batter according to the directions on the box substituting the olive oil for vegetable oil. Stir in ½ cup of m&m’s and ½ of peanut butter chips. Pour the batter into a baking pan of your choice. I went with a 9-inch spring form pan. Sprinkle remaining ¼ of m&m’s and ¼ cup of peanut butter chips on top of batter. Bake according to directions. Let cool completely before cutting.
