Ok, it’s December and we still have Halloween candy in our house. Miles always says that he’s going to eat it all (not that I’m forcing him), but two months later, it remains in a jar on our dining table. I usually take it to the office, but this year I decided to get a little creative. Miles hates Snickers, so I took out all of the minis I could find and decided to make rice krispies bars with them.
After sorting through all of the candy, it seemed that I only had a few bars, so I made a quick run to the market and bought a bag of Snickers Bites. Who knew you could have about 8 for 190 calories?!?
I started melting the marshmallows (using the traditional recipe) and was about to add the rice krispies, when I hit me to add a little something extra. I didn’t just want marshmallows with candy; I needed something more. I opened the fridge hoping for inspiration and then I saw it. A jar of left over salted caramel sauce from Trader Joe’s. I had about half a jar left, so I dumped it in, added the cereal and the candy and put it in a pan.
When it cooled, I melted a little pate glace (melting chocolate) and poured it on top, watching the chocolate seep into the bars. It reminded me of that veiny look you get when you cut open blue cheese.
After the chocolate set, I cut the bars into squares, and took them to the office. I debated on asking Miles if he wanted to try it, knowing he doesn’t like nuts, but I did anyway. He took a “polite bite” and said they tasted great, but the nuts ruined it. My coworkers disagreed. So did I.
It satisfied almost every sweet craving I possessed at a fraction of the calories! At least that’s what I told myself. Marshmallow and cereal with a little candy and chocolate can’t be that bad. Can it?
Snickers Rice Krispies Bars
- 3 tablespoons butter
- 1 package ((10 oz., about 40) marshmallows)
- 6 cups rice cereal
- 4 to 6 oz caramel sauce
- 12 to 14 snickers bites (, chopped)
- 1 cup chocolate chips
- In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in caramel sauce. Add rice cereal. Stir until well coated. Fold in snickers. Press mixture into an 8 x 8-inch pan coated with cooking spray or butter. Cool.
- Melt chocolate chips in a microwave safe bowl for 30-second increments on high power until melted. Pour melted chocolate over the bars and spread evenly with a spatula. Let chocolate set. Cut into squares.
