Bacon Cheddar and Chive Waffles

Ingredients

  • 1 ½ teaspoons baking powder
  • 1 ¼ teaspoons kosher salt
  • ½ teaspoon sugar
  • 1/8 teaspoon baking soda
  • 2 ¾ cups all-purpose flour , plus more
  • ¾ cups (1 ½ sticks) chilled unsalted butter, cut into pieces
  • 1 ¾ cups chilled buttermilk
  • 6 slices of thick cut bacon , cooked crisp and coarsely chopped
  • 2 ½ cups (packed) coarsely grated sharp cheddar cheese (about 12oz) – I used while cheddar
  • ¼ cup chopped fresh chives

Instruction

  1. Pulse baking powder, salt, sugar, baking soda, and 2 ¾ cups flour in a food processor. Add butter and pulse until the texture of coarse meal with a few pea-size pieces of butter remaining. Transfer mixture to a large bowl. Add bacon and chives. Stir in buttermilk, then add cheddar cheese, mixing until combined.
  2. Heat a waffle iron. Drop approximately 1/3 cup of batter in each square. Follow the directions on your waffle iron to cook the waffles. Serve immediately.
