Banana Waffles with Pecan Maple Syrup

Ingredients

for the waffles

  • 2 cups all-purpose flour
  • 2 tablespoons dark brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 1 cup milk
  • 2 ripe bananas , pureed (about ⅔ cup)
  • 2 large eggs
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ¼ cup chopped walnuts

for the pecan syrup

  • ½ cup maple syrup
  • ¼ cup pecans , toasted and coarsely chopped

Instruction

make the waffles

  1. In a large bowl mix flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In a medium bowl mix milk, bananas, eggs, vegetable oil and vanilla extract.
  3. Stir wet ingredients into dry ingredients until smooth and combined.
  4. Follow instructions of waffle maker to cook waffles.

make the syrup

  1. In a small saucepan bring maple syrup and pecans to a boil. Remove syrup from heat and keep warm, covered.
