Classic Pumpkin Bread

Ingredients

  • 1 cup pumpkin puree
  • 2 eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves

Instruction

  1. Preheat oven to 350°. Lightly spray a 9 x 5 inch loaf pan with non-stick spray. In a large bowl, combine the pumpkin, eggs, oil, and vanilla. Add the sugar and mix well. In a medium bowl combine the flour, salt, baking soda, baking powder, and spices. Add to the wet ingredients and mix just until combined.
  2. Pour into the loaf pan and bake for about 45 minutes or until a toothpick comes out clean. Allow to cool before removing from pan.
