I can’t take any credit for this twice cooked french fries recipe. I originally read an article on bon appetit and make them to go with bacon cheeseburgers with caramelized onion that I made a while back. I wanted to post it again because I made them again to go with the Ranch hot dogs I made over the weekend and again they were a success. It’s definitely a time-consuming process, but the results leave you with a crispy on the outside, soft on the inside french fry that’s so tasty they don’t need ketchup! And it also gives me a chance to use my mini deep fryer that I love. I like to call it my little test kitchen deep fryer. If you’re a French fry lover, you should definitely try this recipe.
