When I was a stay at home mom, Miles would wake up to a homemade breakfast all most every morning. The only exception was when he wanted cereal. Now that I’m a single mom working full time, it’s toast every day. Sometimes I’ll batch cook waffles or scones, but it’s usually just the toast. Today I woke up with a little extra time and made him a sausage egg and cheese sandwich for breakfast. I had made English muffins the other day, and still had a few left over.
I can’t remember the last time I saw I teenager this happy so early in the morning. He gobbled it up, and asked for another one. I totally forgot about the teenage appetite. I didn’t have time to make another one, so he had a plain English muffin instead.
The sausage McMuffin (no judging) was his favorite as a child. I would make a homemade version with store bought English muffins, regular sausage patties, and American cheese. This one was a little fancier. The English muffins were homemade. I used savory sage sausage and formed the patties by hand. I topped the sausage with Gouda cheese, and then folded scrambled egg with parsley, adding a little kimchi on top. Since he’s not a huge fan of kimchi, I just added a little. I don’t eat eggs, but I was curious to know if it would be any good. The kimchi wasn’t bad. I could take it or leave it. Though I can say I wish I made one for myself. At least now I know what I’m having for dinner!
