I’m not sure where White Castle originated, but we had them in Detroit and Indiana (where I went to college) and I practically ate them all throughout high school and college. They were perfect tiny burgers filled with onions, and topped with a pickle. As an adult you move away from fast food, but my parents were nice enough to introduce White Castle to Miles when he was about six.
For about three or four years, when we would visit my parents, Miles would somehow end up at White Castle for dinner. Now that we live on the east coast and they aren’t any here, he asked me some from scratch. Mmmm ok, I think I can handle that. I didn’t have a recipe to work from, but I could take a stab at it on my own.
I did a little research on how they were prepared. I remember them being cooked over onions and they were steamed, topped with pickle, bun and then cheese was added if requested.
They were surprising delicious. They didn’t taste exactly like the real thing, but I loved how the onion flavor permeated through the burger. Since they were small, you could eat three or four with no problem. Before Miles finished the last one, he asked when I was going to make them again.
Homemade White Castle Burgers
- ½ pound 85% lean ground beef
- 1 onion , minced
- 6 tablespoons (3/4 stick of butter)
- Small dinner rolls (I used Martins)
- Drinking straw or toothpick
Roll the ground beef in between two sheets of parchment paper to ¼ inch thick. Using a knife or pizza cutter cut the beef into 3x3 inch squares. Using a straw or toothpick make 5 holes in each of the burgers. This allows the burgers to cook quickly and the onions to really add flavor to the burgers.
In a large pan melt the butter and add the minced onions sautéing until the onions have started to soften, but are still a little firm. Place the burger patties on top of the onions and cook over medium heat until brown all the way through, flipping the burger only once.
While the burgers are in the pan preheat the oven to 300 degrees. Dampen a clean kitchen town and wrap them around the buns. Place the towel with the buns on a baking sheet and place in the oven for about 5-7 minutes, or until the buns are warm and soft.
When the burgers are ready, split the bun in half, place the burger on top, add a little grilled minced onion and top with a dill pickle. Serve warm.
